1 small cucumber , unpared
1/2 cup mild red onion , thinly slivered

1/8 teaspoon dried arbol chile , crumbled
3 tablespoons olive oil

Instructions

1.Peel the jicama and cut it into matchsticks or thin 2-inch long strips.
2.Cut the cucumber into thin slices or half-moon shapes.

4.In a smaller bowl, whisk together the lime juice, grated lime peel, minced garlic, salt, dried arbol chile, and olive oil.
5.Pour the dressing over the vegetables and toss to combine.
