3 garlic cloves , pressed

1 teaspoon ground coriander
1 can whole tomatoes
1/2 teaspoon hot chili powder
2 packages whole frozen leaf spinach or ( 10 ounce ) packages fresh Baby Spinach
salt & pepper
2 slices bacon , chopped ( optional )
1 cup sour cream ( optional ) or 1 cup Greek yogurt ( optional )

Instructions

1.Rinse the lentils in cold water and drain. In a large pot, heat 5 cups of water or beef stock.
2.Add the lentils, salt, olive oil, onions, and garlic and bring to a boil.
3.Reduce heat to low and add the cayenne pepper, bay leaves, cumin, coriander, and tomatoes.
4.Cover and simmer for 20 minutes.
5.Add the spinach, chili powder, salt, and pepper.
6.If using, add the chopped bacon and cook for an additional 10 minutes.
7.Ladle the soup into bowls and serve with a dollop of sour cream or Greek yogurt.
