2 pounds ground turkey
5 tablespoons vegetable oil , divided
2 large green bell peppers , cut into strips
1 large red bell pepper , cut into strips
1 large yellow bell pepper , cut into strips
2 large onions , cut into 1/2 inch chunks
2 cups sofrito sauce
1 can tomato sauce
4 medium potatoes , cut into 1/2 inch chunks
4 carrots , sliced
2 cups broccoli
5 cups water
1 cup salsa
16 ounces low fat mozzarella cheese , shredded

Instructions

1.Preheat oven to 350°F.
2.In a mixing bowl, combine ground turkey with 2 tablespoons of vegetable oil, salt, and pepper. Mix together and roll into 1-inch balls.
3.In a large pot, heat remaining vegetable oil over medium-high heat. Add in bell peppers and onions and cook until softened (about 5 minutes).
4.Stir in sofrito sauce, tomato sauce, potatoes, and carrots. Mix together and add 3 cups of water.
5.Place the meatballs on a baking sheet and bake for 10-12 minutes until cooked through.
6.When the stew is boiling, add the meatballs and salsa. Cook for another 25-30 minutes until vegetables are tender.
7.Add broccoli and shredded mozzarella cheese then cook for another 5-7 minutes until the cheese melts.
