Ingredients

1 cup jerusalem artichoke , peeled , cut into 3/4 '' chunks and cover with cold water
1 jalapeno pepper , chopped
1/4 cup red pepper , chopped
1/4 cup yellow pepper , chopped
1/4 cup orange bell pepper , chopped
1 stalk celery , sliced
6 medium mushrooms , cleaned & cut in half
3 cloves garlic , peeled and thinly sliced
salt & pepper
vegetable oil cooking spray ( I use lite olive oil in a spray bottle )

Instructions

1.Drain the Jerusalem artichoke and pat them dry.
2.Preheat oven over medium flame and add the vegetable oil in a pan.
3.Once the oil is hot, add the Jerusalem artichoke and let cook for 5 minutes, stirring occasionally.
4.Add the chopped jalapeno pepper, red pepper, yellow pepper, orange bell pepper, celery, mushrooms, garlic, salt, and pepper to the pan and stir for another 5 minutes or until all vegetables are lightly browned and tender.
5.Remove from heat and serve.
