Ingredients

2 tablespoons oil
2 onions , peeled
2 ounces fresh ginger , peeled and roughly chopped
1 bunch fresh cilantro , leaves and stalks separated ( coriander )
3 tablespoons caribbean jerk seasoning
2 sprigs fresh thyme
1 can diced tomatoes , undrained
4 tablespoons red wine vinegar
3 tablespoons light brown sugar
3 cups vegetable broth
2 lbs sweet potatoes , peeled and cut into chunks
2 cans black beans , rinsed and drained
1 jar roasted red peppers , cut into thick slices
salt and pepper , to taste

Instructions

1.In a large pot, heat the oil over medium-high heat.

4.Add the diced tomatoes, red wine vinegar, brown sugar, and vegetable broth to the pot and stir to combine.
5.Add the sweet potatoes to the pot and bring to a boil. Reduce heat to a simmer and let cook for about 20 minutes or until sweet potatoes are tender.
6.Add the black beans and roasted red peppers to the pot and let cook for another 5 minutes.
7.Season with salt and pepper to taste.
8.Serve hot and top with cilantro leaves.
