Ingredients

8 ounces mushrooms , rinsed , drained , and finely chopped
1 onion , peeled and finely chopped
2 tablespoons salad oil
1/2 teaspoon tsps salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/4 teaspoon cayenne
3 tablespoons cider or 3 tablespoons distilled white vinegar
2 tablespoons molasses
1/2 cup all-purpose flour
1 1/2 lbs ground turkey ( breast or a combination of breast and dark meat )
1/2 cup fat-skimmed chicken broth
1 large egg
3/4 cup drained pickled cocktail onion , each cut in half
6 ounces paper-thin slices prosciutto

Instructions

1.Preheat oven to 375°F.
2.In a large skillet, cook mushrooms and onions in oil over medium-high heat, stirring occasionally, until liquid from mushrooms has evaporated and vegetables are slightly browned.
3.Stir in salt, nutmeg, allspice, cinnamon, and cayenne; remove from heat.
4.Stir in cider vinegar and molasses, then flour. In a large bowl, gently mix mushroom mixture, turkey, chicken broth, egg, and cocktail onions.
5.Arrange 3 sheets of prosciutto, one slightly overlapping the next, into a rectangle at least 14 by 8 inches. Mound turkey mixture on prosciutto, then shape into an approximately 9- by 5-inch loaf. Cover turkey with remaining prosciutto.
6.Fold excess prosciutto over loaf to form a package and tuck the ends under. Place in an oiled 9- by 13-inch baking dish.
7.Bake in a preheated oven for about 1 hour or until a meat thermometer inserted in center of loaf reads 165°F.
