Ingredients

1 can crushed pineapple , drained
2 tablespoons red onions , minced
2 tablespoons fresh cilantro , chopped
2 tablespoons lime juice
1 tablespoon fresh ginger , peeled and grated
1 jalapeno pepper , seeded and minced
1 teaspoon honey
1 lb medium shrimp , peeled and deveined ( tails left on if desired )
1 tablespoon jerk seasoning
2 teaspoons canola oil

Instructions

1.In a medium bowl, combine the drained crushed pineapple, minced red onion, chopped cilantro, lime juice, grated ginger, seeded and minced jalapeno pepper and honey. Mix well to make the pineapple salsa.
2.Heat a large skillet over medium-high heat. Add the canola oil.
3.Meanwhile, in a small bowl, mix the jerk seasoning with 1 teaspoon of water to make a paste. Add the shrimp and toss to coat.
4.Once the skillet is hot, add the shrimp to the pan. Sauté for 2-3 minutes per side or until the shrimp turns pink and is cooked through.
5.Serve the jerk shrimp hot with a side of pineapple salsa.
