Instructions

1.In a medium bowl, whisk together garlic, scotch bonnet pepper, thyme, allspice, brown sugar, rum, vegetable oil, 2 teaspoons kosher salt, and 1/4 teaspoon black pepper.
2.Rub the jerk seasoning mixture into the pork and let it sit at room temperature for 15 to 30 minutes.
3.Preheat a grill to medium-high heat.
4.Meanwhile, in a large, microwave-safe bowl, melt butter in microwave. Add sweet potatoes. Cover with plastic wrap, pierce with fork several times, and microwave until almost tender, about 10 minutes.

6.Transfer sweet potatoes to the grill and cook until tender and slightly charred, 2 to 3 minutes per side.
