Ingredients

1 ripe mango , peeled and diced
2 tablespoons vegetable oil
1/2 scotch bonnet peppers , seeds removed , finely diced or 1/2 teaspoon dried chili pepper flakes
2 large red onions , finely sliced
50 g caster sugar
50 ml white wine vinegar
4 small chicken breasts , batted out to 5mm thick escallops
1 tablespoon jamaican jerk spice , paste
generous pinch ground black pepper
3 tablespoons white wine vinegar
8 -10 rice paper , roll wrappers
1 handful mixed baby greens
8 -12 small mint leaves ( optional )
2 carrots , shredded
2 spring onions , green part only , shredded
1/2 cucumber , shredded
1 teaspoon black sesame seed
Jerk Chicken Rice Paper Rolls With Mango Sauce is a healthy and delicious dish that combines the exotic flavors of the Caribbean with that of Southeast Asia. Instructions

1.In a bowl, mix the diced mango with white wine vinegar, and half of the diced Scotch Bonnet pepper.
2.Heat the vegetable oil in a frying pan and fry the sliced onions and remaining Scotch Bonnet pepper for about 3 minutes.
3.Sprinkle caster sugar over the onions and stir until the sugar has dissolved.
4.Add white wine vinegar and cook until it becomes syrupy.
5.Mix Jamaican jerk paste, black pepper, and white wine vinegar in a bowl and add the chicken pieces. Mix well.
6.Heat the same pan used for frying the onions and fry the chicken for about 5 minutes on each side.
7.Soak the rice paper wrappers in a bowl of water for about 30 seconds and place on a cutting board.
8.Add mixed greens, shredded carrots, cucumber, shredded spring onions, and mint leaves on each roll.
9.Add the cooked chicken, and drizzle the mango sauce on top.
10.Roll the rice paper tightly and slice in half. Sprinkle black sesame seeds on top and serve.
