Ingredients

3 tomatoes
3 thai bird chilies ( can use a milder chili like jalapeno for a milder sauce )
1 head garlic
1 pinch cilantro
fish sauce ( will not be vegan if you use this ) ( optional )
Jeow salsa is a staple condiment in Lao cuisine, which is known for its bold and flavorful dishes. Typically served alongside grilled meats and vegetables, Jeow adds a spicy and sour kick to any meal. This salsa is made by grilling the tomatoes until slightly charred, then mixing them with a paste made from garlic and chili. A splash of fish sauce adds a savory umami flavor to the mix. Instructions

1.Cut the tomatoes in half and place in a dry pan on medium heat, cut side down. Leave until the skin starts to blister and blacken, then turn over and cook the other half until soft.
2.In a mortar, grind the garlic and chilies into a paste. Then add the cilantro and continue grinding.
3.Once the tomatoes are cooked, peel off the skin and chop them into small pieces. Add them to the mortar and mix well with the paste.
4.Add a splash of fish sauce to taste. Serve with rice and grilled meats or vegetables.
