Ingredients

2 large turkey drumsticks
2 large carrots , julienned
2 large zucchini , julienned
1 large white sweet potato
2 dried pears
2 dried peaches
6 dried apricots
15 red grape tomatoes
15 yellow pear tomatoes
1/2 cup stuffed green olive
1/2 cup kalamata olives or 1/2 cup black olives
2 cups chicken stock
1 tablespoon moroccan seasoning ( I used Garden Fresh brand )
1 teaspoon moroccan seasoning ( I used Garden Fresh brand )
Jenny's Turkey Tagine is an aromatic and flavorful Moroccan-inspired stew, that is perfect for a comforting weeknight dinner. It is a slow-cooked dish that simmers the meat with vegetables and fruits in a savory and slightly sweet broth spiced with Moroccan seasoning. In Moroccan cuisine, a tagine is a traditional clay pot used to cook slow-braised or stewed dishes, sometimes baked in an oven and served with bread or rice. In this recipe, we cook the tagine in a dutch oven in the oven, instead of a traditional tagine. The combination of dried fruits and olives lend a distinctive taste and texture to the dish, while the spices provide a medley of flavors that will keep you coming back for more. Serve it with some rice or warm bread to soak up the sauce.

Instructions

1.Preheat the oven to 375°F.
2.In a large dutch oven, heat the olive oil over medium-high heat.
3.Rinse the turkey drumsticks and pat them dry with paper towels. Season the drumsticks with a tablespoon of moroccan seasoning, rubbing the seasoning onto the meat.
4.Sear the turkey drumsticks in the hot oil until golden brown on all sides, then remove and set aside.
5.Add the carrots, zucchini, and sweet potato to the dutch oven, sautéing them until slightly softened.
6.Add in the dried pears, peaches, and apricots, as well as the stuffed green olives and kalamata olives. Stir everything together well to fully coat in the spices already in the Dutch oven.
7.Pour in the chicken stock and the remaining teaspoon of moroccan seasoning. Stir well.
8.Return the turkey drumsticks to the dutch oven, nestling them amongst the fruits and vegetables.
9.Add the grape tomatoes and yellow pear tomatoes to the pot without stirring too much as stirring could cause tomatoes to break apart.
10.Cover the pot with a tight-fitting lid and transfer to the preheated oven. Bake for around 2 hours, or until meat is tender and cooked through.

CONS

This recipe takes some preparation to chop some of the veggies and ingredients into the required size for the tagine.

Leftover turkey meat may fall from the bone, which could require some additional time to pick out bones from the final serving before eating.
Additionally It may require a long cooking time.
