Instructions

1.Preheat oven to 400 degrees F (200 degrees C).
2.Rinse the pork roast under cold water and pat dry. Cut a lengthwise pocket down the center of the roast, leaving the ends intact.
3.Combine the baby spinach, dried pineapple, rosemary, parsley, poultry seasoning, garlic, salt, pepper, garlic powder, onion powder, melted butter, and 2 tablespoons olive oil in a bowl. Pack the stuffing tightly into the pork pocket, then place the pork on a greased roasting pan.
4.Toss the carrots, potatoes, and onion in a bowl with the remaining olive oil. Place the vegetables around the pork roast.
