1 lb potato
1 large onion , diced
1 large green bell pepper
2 stalks celery , chopped
3 bay leaves
1 teaspoon dried thyme
1 tablespoon curry powder
1 tablespoon chicken stock powder
1 liter water ( approx )

Instructions

1.Cut the pumpkin and potatoes into small cubes.
2.In a large pot, add the pumpkin, potato, onion, green bell pepper, celery, bay leaves, dried thyme, curry powder, and chicken stock powder.
3.Add 1 liter of water to the pot and bring to a boil.
4.Reduce the heat to low and let the soup simmer for 20-30 minutes, or until the pumpkin and potatoes are tender.
5.Remove the bay leaves and use an immersion blender to blend the soup until smooth.
6.Serve hot and enjoy!
