Ingredients

4 -5 medium kumara , with skins on
3 cups broccoli florets
1 cup fresh finely chopped parsley
2 tablespoons freshly chopped mint
100 g marinated mussels
1 -2 garlic clove , crushed
1 -2 tablespoon oil-and-vinegar dressing or 1 -2 tablespoon homemade mayonnaise
1/4 cup freshly squeezed orange juice
3 tablespoons light olive oil
2 tablespoons lemon juice
2 teaspoons sugar
This jazzed up kumara salad is a spin on the classic potato salad, using kumara as the star ingredient. Instructions

1.Preheat oven to 200°C.
2.Cut kumara into bite sized pieces and place on a lined baking tray. Drizzle over 1 tablespoon of olive oil.
3.Bake in oven for approximately 35 minutes, or until kumara is golden and tender.
4.In the last 5 minutes of cooking, add broccoli florets to the baking tray and toss through with the kumara.
5.In a small bowl whisk together the garlic, oil-and-vinegar dressing or homemade mayonnaise, orange juice, olive oil, lemon juice, and sugar.
6.In a large bowl combine the cooked kumara and broccoli with the freshly chopped parsley, mint, and marinated mussels. Pour over the dressing and toss everything together.
7.Enjoy immediately or serve chilled.
