1 1 lb tilapia fillets or 1 lb other mild firm fish , cut lengthwise in 1/2 inch strips
1/4 cup fine unseasoned breadcrumbs

8 quartered tomatillos or 1 cup chopped green tomato
1 teaspoon cumin ( optional )
4 10-inch flour tortillas
1 cup shredded or finely sliced jarlsberg cheese
chopped cilantro , to taste

Instructions

1.In a large mixing bowl, combine the breadcrumbs, salt, and pepper.
2.Dredge the fish strips in the breadcrumb mixture, shaking off the excess.
3.Heat a large nonstick skillet over medium-high heat and coat with cooking spray.
4.Add the fish strips and cook for 3-4 minutes per side until golden brown and crispy.
5.Remove the fish from the skillet and keep warm.
6.In the same skillet, add the sliced onion, tomatillos or green tomato, and cumin (if using).
7.Cook for 5-7 minutes or until the vegetables are lightly caramelized and tender.
8.Warm the flour tortillas in the microwave or oven.
9.To assemble the fajitas, place some of the cooked fish and caramelized vegetables onto each tortilla.
10.Top with shredded or sliced Jarlsberg cheese, chopped cilantro, and a squeeze of fresh lime juice.
11.Roll up the tortillas into a burrito shape and serve immediately.
