1/8 teaspoon saffron thread , crushed

1 teaspoon kosher salt
2 tablespoons peanut oil
2 large yellow onions , thinly sliced
1 piece fresh ginger , peeled minced
3 medium garlic cloves , minced
2/3 cup dried turkish apricot , packed
1/2 cup almonds , sliced
2 cups vegetable broth
1/2 cup no-salt-added tomato sauce
1 can shoestring potatoes ( Pik-Nik brand recommended )
4 lbs lamb shoulder , cut into 2 inch pieces excess fat trimmed

Instructions

1.In a small bowl, mix cider vinegar, dark brown sugar, ground coriander, ground cumin, ground cinnamon, fresh ground black pepper, fennel seed, ground cardamom, saffron thread, ground cloves, and kosher salt.
2.In a large pot or dutch oven, heat peanut oil over medium heat. Saute onions, ginger, and garlic until onions are translucent.
3.Add lamb and brown on all sides. Add the spice mixture and stir for a few minutes.
4.Add dried apricots, sliced almonds, vegetable broth, and tomato sauce. Bring to a boil then reduce heat to a simmer and let cook for 2 hours.
5.Add shoestring potatoes right before serving.
6.Serve over rice or with naan bread.
