6 ounces dried korean sweet potato noodles
4 teaspoons toasted sesame oil , divided
1/4 cup soy sauce
1 tablespoon packed dark brown sugar
1 tablespoon vegetable oil
1 medium carrot , peeled and cut into 1-1/2-inch matchsticks
1/2 medium yellow onion , thinly sliced
3/4 teaspoon kosher salt , plus more as needed ( not iodized table salt )
1/4 teaspoon fresh ground black pepper , plus more as needed
4 ounces fresh shiitake mushrooms , stems trimmed and thinly sliced
2 medium garlic cloves , finely chopped
4 ounces Baby Spinach
1 medium scallion , thinly sliced ( white and light green parts only )
1 1/2 teaspoons toasted sesame seeds
Japchae is a classic Korean dish that dates back to the 17th century. It was originally served as a royal dish but has since become a popular everyday meal in Korea and around the world. Japchae consists of sweet potato noodles, stir-fried with vegetables and protein and seasoned with soy sauce and sesame oil. Instructions

1.Bring a pot of water to boil, add the sweet potato noodles and cook for 6-7 minutes until tender. Drain and rinse under cold water, then drain well. Cut the noodles with a pair of scissors a couple of times to shorten.
2.In a bowl, whisk together 3 teaspoons of sesame oil, soy sauce, and brown sugar until the sugar dissolves. Set aside.
3.Heat vegetable oil in a large pan or wok over medium-high heat. Add the carrot and stir-fry for 1-2 minutes until slightly softened. Add the onion and stir-fry for another minute.
4.Season with salt and pepper, then add the mushrooms and stir-fry for 2-3 minutes until the mushrooms are cooked through.
5.Add the garlic and stir-fry for 30 seconds until fragrant. Add the spinach and cook for another minute until the spinach is wilted.
6.Add the noodles to the pan, followed by the soy sauce mixture. Toss everything together for 1-2 minutes until the noodles are coated in the sauce.
7.Remove from the heat and stir in the remaining teaspoon of sesame oil. Sprinkle with sliced scallions and sesame seeds, and serve hot or at room temperature.
