Ingredients

1 teaspoon soy sauce
1/2 teaspoon baking soda , mixed with
1 tablespoon water
2 cups cake flour , sifted three times
1/3 - 1/2 cup water
1 -2 cup bean paste , mixed with
2 tablespoons light corn syrup
3 eggs
1/2 - 3/4 cup sugar
1 tablespoon light corn syrup or 1 tablespoon honey
1 tablespoon mirin or 1 tablespoon sake
Dora Yaki is a popular dish in Japan, usually eaten as a dessert or a snack. It can also be served with tea or coffee as a breakfast item. Instructions

1.Beat the eggs in a large bowl and then add sugar to it. Continue beating until it becomes frothy.
2.Add soy sauce, mirin, and baking soda mixture to the bowl; mix well.
3.Add sifted cake flour and mix until it becomes a smooth batter.
4.Add 1/3 to 1/2 cup water to the batter, depending upon its thickness. Mix well.
5.Heat a non-stick pan over medium heat. Drop a dollop of batter on the heated pan and spread it into a round shape of the desired thickness.
6.When the edges become slightly dry, use a spatula to flip it, and cook the other side until golden brown.
7.Remove it from the pan and place a spoonful of sweet paste on one half. Fold over the other half to form a sandwich.
8.Serve it hot or at room temperature.
