10 umeboshi
1/4 cup sugar
2 tablespoons mirin
10 green shiso , washed
300 g dried spaghetti ( thin )
30 g butter

Instructions

1.Boil a large pot of salted water and cook spaghetti for 8-10 minutes, until al dente. Reserve 1/2 cup of pasta water before draining.

3.Melt butter in a pan on medium heat. Add the chopped umeboshi, sugar, and mirin. Cook until the sugar dissolves completely.
4.Add the green shiso and reserved pasta water in the pan. Cook on medium heat for about 3-4 minutes, until shiso is wilted.
5.Add the cooked pasta into the pan and mix everything together.
6.Serve hot.
