Ingredients

320 g eggs , lightly beaten
280 g brown sugar
40 g honey
4 g baking powder
250 g water ( I would also try milk or soymilk )
450 g flour
red bean paste ( azuki , or other sweet filling )
Obanyaki is a traditional Japanese street food that dates back to the Edo period (1603-1867). Also known as Imagawayaki, Obanyaki are small pancakes that are typically filled with sweetened red bean paste, but can also be filled with other ingredients such as custard, chocolate, or fruit. Obanyaki are often sold at festivals and markets throughout Japan, and are enjoyed by people of all ages.

Instructions

1.In a large bowl, mix together the beaten eggs, brown sugar, honey, and baking powder until well combined.
2.Slowly add in the water (or milk/soymilk) and continue to mix until smooth.
3.Gradually add in the flour, stirring until the batter is thick and smooth.
4.Heat a non-stick pan or griddle over medium heat.
5.Scoop about 1/4 cup of batter onto the pan and spread it into a circle.
6.Spoon about 1 tablespoon of red bean paste onto one side of the pancake.
7.Fold the pancake over the filling.
8.Cook for 2-3 minutes on each side, until golden brown.
9.Serve hot and enjoy!
