Ingredients

280 g fresh udon noodles , uncooked
120 g chicken
4 small dried shiitake mushrooms ( black mushrooms )
1 package aburage ( 2 slices thinly sliced and fried tofu )
1 small burdock root ( gobo root )
4 slices kamaboko ( commercially available fish paste product )
4 hard-boiled eggs
2 green onions
160 g red miso
1400 ml dashi ( Japanese soup stock )
200 ml milk
ground japanese brown pepper ( sansho )
Miso Nikomi Udon is a traditional Japanese soup that has been served in Japan for centuries. It is a popular dish during winters as it is hearty, warm, and filling, which warms-up the body. This soup is made with udon noodles, chicken, tofu, and vegetables combined with red miso paste. The soup has a strong umami flavour and is loaded with essential nutrients, making it an ideal meal for lunch or dinner.

Instructions

1.Slice the chicken into bite-sized pieces and soak dried shiitake mushrooms in water to rehydrate for about 10-15 minutes.
2.Cut the burdock root (gobo) diagonally into thin slices.
3.Take a pot and pour dashi soup stock into it, bring it to a boil and add the chicken, shiitake mushrooms, burdock root, aburage and red miso, cook it for about 10 minutes.
4.Add the uncooked udon noodles and cook for another 7 minutes.
5.Stir the milk gently into the soup, add Japanese brown pepper (sansho) as per taste preference.
6.Serve hot and top it with sliced green onion and kamaboko.
