2 eggs

Japanese Green Tea Petits Fours are a traditional Japanese dessert that are often served at tea ceremonies and special occasions. Instructions

1.Preheat the oven to 350°F (175°C) and grease an 8 inch square cake pan.
2.Sift together the cake flour, cornstarch and green tea powder.
3.Beat the eggs and egg yolks together in a mixing bowl until light and frothy.
4.Gradually add the sugar and continue to beat until the mixture increases in volume and becomes thick.
5.Add the sifted flour mixture to the egg mixture and fold together.
6.In a separate bowl, beat the egg whites and cream of tartar until frothy.
7.Gradually add the sugar until the mixture reaches stiff peaks.
8.Fold the egg white mixture into the cake batter.
9.Pour the mixture into the prepared cake pan and smooth the top.
10.Bake in the preheated oven for 18-20 minutes.
11.Remove the cake from the oven and let it cool completely.
12.Remove the cake from the pan and slice it into 12 squares.
13.In a mixing bowl combine the heavy cream, powdered green tea and superfine sugar.
14.Using a stand mixer, beat the mixture until stiff peaks form.
15.Spread the almond paste on top of each cake square and top with the green tea whipped cream.
16.Dust the top with confectioner’s sugar before serving.
