Instructions

1.Preheat oven to 350F (175C) and grease and flour two 9-inch round cake pans.

8.Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

10.While the cakes cool, make the frosting.
11.In a medium pot, whisk together the cornstarch and water until smooth.
12.Add the sugar and lemon rind and juice.
13.Cook over medium heat, stirring constantly until thickened.
14.Remove from heat and add the coconut.
15.Spread the frosting between the two cake layers, on top of the cake and around the sides.
