Ingredients

1 teaspoon sesame oil
4 Japanese eggplants
4 eggs , beaten
2 cups flour
2 cups panko breadcrumbs
oil
shredded green onion , strips
tomatoes , cubes

Instructions

1.Preheat the oven to 400°F.
2.Cut off the stems off the eggplants and thinly slice them lengthwise, but not all the way through, so that they are still attached at the stem.
3.Fan the eggplants and brush them with beaten eggs.
4.Dip the eggplants in flour, then in panko (Japanese bread crumbs).
5.Heat the oil in a skillet over medium heat and carefully sauté the eggplants until golden brown on both sides.
6.In another pan, heat the oil and stir-fry the garlic and ginger.
7.Add the black beans, sherry, clams with juice, chicken stock, oyster sauce, salt, white pepper, and caramel coloring.
8.Cook on medium-high heat until the sauce has become thick. Add cornstarch roux if necessary.
9.Add sesame oil and serve the eggplants with black bean sauce on top. Garnish with shredded green onions and cubed tomatoes.
