8 chicken drumsticks or 1 1/2-2 lbs chicken drumsticks
1 tablespoon olive oil
1/4 cup ponzu sauce , lime sauce
1 tablespoon ketchup
1/2 cup honey
1/2 - 1 garlic clove , minced

3/4 cup ketchup
1/2 cup pure maple syrup
1/2 tablespoon liquid smoke flavoring
1/2 teaspoon dry mustard
1/4 teaspoon garlic powder

1 cup onion , chopped
2 cups canned black-eyed peas , drained and rinsed

1/2 head cabbage , cored
1 medium carrot
1 tablespoon olive oil
2 tablespoons rice vinegar
2 tablespoons pure maple syrup
1 tablespoon sriracha sauce
1 tablespoon lime juice
1/2 teaspoon ground ginger

Instructions

1.Preheat oven to 425°F (220°C).
2.In a bowl, combine olive oil, ponzu sauce, ketchup, honey, minced garlic, salt and pepper. Brush the chicken drumsticks with the mixture and transfer to a baking sheet.
3.Bake for 30 minutes or until the internal temperature of the chicken reaches 165°F (75°C).
4.In a saucepan, combine ketchup, maple syrup, liquid smoke flavoring, dry mustard, garlic powder, salt and pepper, and onion. Simmer for 10 minutes or until slightly thickened.
5.Spray a saucepan with cooking spray and add the black-eyed peas. Heat over medium heat, stirring occasionally.
6.In a bowl, whisk together olive oil, rice vinegar, maple syrup, sriracha sauce, lime juice, ground ginger and salt. Add the cabbage and carrot and toss to coat. Serve with the chicken and black-eyed peas.
