2 tablespoons sesame seeds
1/2 cup dried Asian-style whole sardines
2 1/2 tablespoons red miso paste
1/2 cup boiling water
1 package silken tofu , cubed
4 green onions , thinly sliced
crushed red pepper flakes ( optional )
Japanese Country-Style Miso and Tofu (Hiya Shiru) is a traditional soup commonly served in the summer months in Japan. This refreshing, cold soup is perfect for hot weather as it helps regulate body temperature and provides essential nutrients. This dish is easy to make and doesn't take much time. Instructions

1.Toast sesame seeds in a dry pan over low heat until golden, stirring occasionally.
2.In a blender, pulse the dried sardines into small pieces.
3.In a medium bowl, dissolve miso paste with boiling water.
4.In a large pot over medium heat, add 4 cups of water and sardine pieces, bringing it to a simmer for a couple of minutes, occasionally skimming any foam that forms on the surface.
5.Strain the broth through a fine-mesh strainer into another pot, and discard the solids.
6.Put the broth back on medium heat, add the cubed tofu and green onions, and cook for 2-3 minutes.
7.Divide soup between 4 bowls, sprinkle with sesame seeds and red pepper flakes to taste. Serve hot or cold.
