Ingredients

1 lb eel steak
3 tablespoons sake
2 tablespoons mirin
2 tablespoons soy sauce
4 teaspoons sugar
1/2 cup fish stock

Instructions

1.In a small pan, combine sake, mirin, soy sauce, and sugar. Cook over low heat until sugar is dissolved, then increase the temperature and let the mixture boil.
2.Remove from heat and let it cool. Once cool, add fish stock and keep aside.
3.Preheat the grill and oil the grate.
4.Place the eel on the grate, skin side down. Grill for about 7-8 minutes until the skin is crisp and just starts to char.
5.Brush the sauce onto the eel and flip it over. Grill for an additional 2-3 minutes, brushing the sauce often.
6.Remove from heat and let it rest for 5 minutes.
7.Heat remaining sauce in a pan for about 1 minute then pour over eel before serving.
