6 russet baking potatoes , peeled and sliced thin lengthwise
1 can anchovy fillets , drained , reserving the oil and chopped
1 1/2 cups heavy cream

Instructions

1.Preheat oven to 375°F (190°C).
2.In a large skillet, sauté the onions in the butter until translucent. Remove from heat.

4.Spread half of the onions and half of the chopped anchovies on top of the potatoes.
5.Repeat with a second layer of potatoes, onions, and anchovies.
6.Pour the heavy cream over the entire casserole.
7.Bake for 60-75 minutes or until the potatoes are tender and the top is golden brown.
