Ingredients

2 lbs ground beef
20 corn tortillas
2 cans enchilada sauce ( el paso brand )
1 envelope taco seasoning ( el paso )
1 lb shredded cheddar cheese
3 tablespoons vegetable oil

Jan's Easy Beef Enchiladas is one of the most favorite Mexican dish. Beef enchiladas consist of corn tortillas filled with seasoned ground beef and smothered in delicious red enchilada sauce. It's a satisfying and filling dish that's perfect for weeknight dinners, potlucks and gatherings with friends and family. Serve this dish with a side salad to balance out the meal.

Instructions

1.Preheat the oven to 375°F.
2.Heat the vegetable oil in a skillet over medium-high heat. Add the ground beef and cook until browned, stirring occasionally.
3.Add the taco seasoning and one can of enchilada sauce to the skillet, stir until the beef is well coated.
4.Spray a 9 x 13 inch baking dish with cooking spray.
5.Spoon 1/4 cup of beef and sauce filling into each corn tortilla and roll it up, placing it seam side down in the baking dish.
6.Pour the remaining can of enchilada sauce over the tortillas.
7.Top with shredded cheddar cheese.
8.Bake for 25-30 minutes, or until the cheese is melted and bubbly.
