Jamm’n Jamaican Pudd’n is a traditional Jamaican dessert made with coconut, rice, and raisins, and is often served during special occasions like Christmas and Easter. The pudding is flavorful, rich, and sweet, and is made with a combination of coconut, rice, half-and-half, and raisins. This dessert is best served warm and topped with fresh mango salsa, which gives it a zingy flavor that balances out the sweetness of the pudding. The coconut and mango give the Jamm’n Jamaican Pudd’n a tropical feel, transporting you to the Caribbean with every bite.

Instructions

.Preheat your oven to 325 degrees Fahrenheit.
.Drain the coconut water and remove the flesh from the shell. Peel the brown skin from the flesh and shred it using a grater. Set aside.
.In a medium saucepan, bring the half-and-half, rice, brown sugar, and salt to a simmer over medium heat, stirring occasionally. Reduce the heat to low, cover, and simmer until the rice is tender and the mixture is creamy, about 35 minutes.
.Stir in the vanilla extract, raisins, and ginger, and remove from heat. Add the shredded coconut flesh and mix well.
.Butter the baking dish and pour the pudding mixture into it. Bake for 20 minutes and then stir the mixture. Bake for another 15-20 minutes, or until the edges are golden brown and the center is set.
.To make the mango salsa, cut the flesh of the mango away from the pit and dice it into bite-sized pieces.
.In a small bowl, mix the lime juice and 1/4 cup of water together.
.Combine the mango and lime juice mixture and mix well to combine.
.Serve the warm pudding with the mango salsa. Enjoy!
