Ingredients

100 g unsalted butter
100 g caster sugar
100 g plain flour ( sifted with cornstarh )
25 g cornstarch ( sifted with flour )
seedless raspberry jam ( thicker is better )
Jammie Dodgers, also known as jam sandwich cookies, are a popular sweet treat in the UK and Australia. They are essentially shortbread cookies with a sweet jam filling, usually raspberry. Instructions

1.Preheat oven to 180°C
2.Cream together the butter and sugar until smooth.
3.Mix in flour and cornstarch until a dough is formed.
4.Roll out the dough on a floured surface and use a cookie cutter to cut out circles of dough.
5.Place half the circles on a lined baking tray and spoon a small amount of jam onto the center of each.
6.Use the remaining circles of dough to create a sandwich over the top of the jam.
7.Bake for 12-15 minutes or until golden.
8.Leave to cool and enjoy!
