Ingredients

10 -12 cloves garlic
450 g blanched almonds
140 g sourdough bread , crusts removed
225 ml low-fat milk
450 ml chicken stock or 450 ml water
sherry wine vinegar
extra virgin olive oil
sea salt
fresh ground black pepper
1 bunch green grape , quartered
3 -5 sprigs fresh marjoram , chopped
Jamie's Roasted Sweet Garlic Soup is a hearty and flavorful soup that is perfect for a chilly autumn day. Roasting the garlic and almonds gives the soup a rich, nutty flavor that is balanced out by the sweetness of the green grapes. This soup is vegetarian and can easily be made vegan by substituting chicken stock with water. It is also gluten-free and contains no dairy or soy. The soup is easy to make and can be ready in under an hour. Serve it hot with a slice of crusty bread on the side.

Instructions

1.Preheat the oven to 180°C.
2.Using a garlic press, crush 10-12 cloves of garlic into a mixing bowl.
3.Add 450g blanched almonds to the mixing bowl.
4.Cut the crusts off 140g of sourdough bread and tear the bread into small pieces – these should measure approximately 2.5cm each. Add to the mixing bowl.
5.Add 225ml low-fat milk to the mixing bowl and stir to mix everything together.
6.Pour the mixture onto a baking tray lined with baking paper, spreading it out evenly. Roast in the preheated oven for 15 minutes.
7.After 15 minutes, remove the baking tray from the oven and add the roasted mixture to a large pot.
8.Add 450ml chicken stock or water (for a vegetarian option), and stir to combine. Bring the mixture to the boil, then turn down the heat and let it simmer for 15 minutes.
9.Season the soup with a splash of sherry wine vinegar, a drizzle of extra virgin olive oil, and a pinch of sea salt and black pepper, to taste.
10.Serve the soup hot, garnished with quartered green grapes and chopped fresh marjoram.
