Instructions

1.Preheat the oven to 180ºC/350ºF/gas 4. Grease and line a 21cm round cake tin with greaseproof paper.
2.In a large bowl, cream together the butter and sugar until light and fluffy.
3.Add the almonds, vanilla, eggs, orange zest and juice, and mix together well.
4.In a separate bowl, sift together the polenta, baking powder and salt.
5.Fold the dry ingredients into the wet ingredients, and mix until just combined.
6.Pour the mixture into the prepared cake tin, and smooth out the top with a spatula.
7.Bake in the preheated oven for 40 to 45 minutes until golden brown and a skewer inserted into the centre of the cake comes out clean.
8.Remove the cake from the oven and allow to cool for 5 minutes before transferring to a wire rack to cool completely.
9.To serve, slice the cake and serve with a dollop of creme fraiche and a drizzle of almond liqueur, if desired.
