Ingredients

1 leg ham
1 tablespoon whole black peppercorn
1 red onion , peeled and cut into wedges
6 scotch bonnet chilies , halved
2 teaspoons whole cloves
1 stick celery , roughly chopped
1 leek , roughly chopped
1/2 bunch thyme
1 cinnamon stick
6 fresh bay leaves
2 tablespoons cinnamon
2 tablespoons allspice
1 tablespoon clove
2 tablespoons ground nutmeg
1 tablespoon sea salt
1 tablespoon fresh ground black pepper
8 garlic cloves , peeled and chopped
2 red onions , peeled and quartered
8 scotch bonnet chilies , stalks removed
250 ml dark rum
250 ml malt vinegar
1 small bunch thyme , leaves picked
3/4 jar fine cut marmalade
125 ml golden rum
The Jamaican Jerk dish is a popular culinary creation that has been enjoyed by people all over the world. Jamie's Christmas Jerk Ham takes inspiration from this traditional Caribbean dish and adds a festive twist, making it perfect for the holiday season. Instructions

1.Preheat the oven to 170°C.
2.Score the top of the ham, then stud it with the black peppercorns.
3.Put the onion wedges, scotch bonnets, cloves, celery, leek, thyme, cinnamon stick and bay leaves into a large roasting tray and put the ham on top
4.Mix together the cinnamon, allspice, clove, nutmeg, sea salt, black pepper and garlic, then use this mixture to rub all over the ham
5.Add the red onions and scotch bonnets to the tray, pour over the dark rum and malt vinegar, then sprinkle over the thyme leaves.
6.Fold the baking paper to fit the tray, then lay it on top of the ham. Repeat with a layer of foil, then roast in the oven for 2½ hours.
7.Remove from the oven, then unwrap the ham and discard the foil and baking paper. Brush the ham with the marmalade and golden rum, then return it to the oven for a further 20 minutes uncovered, or until sticky and caramelised.
8.Serve it hot or warm.
