Ingredients

2 teaspoons sea salt
1 teaspoon black peppercorns
1 teaspoon fresh rosemary
1/2 teaspoon fresh thyme
3 fresh sage leaves
1 garlic , peeled
1 lemon , rind of , grated
This recipe is based on one of Jamie Oliver's favourite French herbs blends, which transforms simple roast lamb into something incredibly fragrant and delicious. This French rustic rub blends together sea salt, black peppercorns, rosemary, thyme, sage leaves, garlic and grated lemon zest to create a super simple but wonderfully aromatic rub for lamb. You simply need to rub it over your joint of lamb and roast it in the oven for a truly delicious meal. Serve with seasonal vegetables and potatoes, or roast potatoes. This recipe is perfect for dinner parties or for a family gathering.

Instructions

1.Using a pestle and mortar, crush the salt and black peppercorns until fine.
2.Pick and finely chop the fresh rosemary, thyme and sage leaves.
3.Add the crushed garlic and finely grated lemon zest to the bowl and mix together to combine.
4.Place the lamb onto the chopping board, then, using a knife, score the lamb all over.
5.Rub the herb mixture all over the lamb, making sure it goes into all the nooks and crannies.
6.Cover with cling film and place in the fridge to marinate for as long as possible, or preferably overnight.
7.Remove from the fridge an hour before you want to cook it, to allow it to come up to room temperature.
8.Preheat your oven to 200ºC/400ºF/gas 6.
9.Place the marinated lamb in a roasting tray and roast in the oven for around 1 hour 15 minutes (or longer depending on your oven and how you like your lamb cooked).
10.Once cooked to your liking, remove from the oven and rest for 10 minutes before carving.

PROS

This rub is incredibly easy to make and adds a delicious and fragrant flavour to the lamb when cooked.
It only takes a few minutes to prepare and can even be made in advance.

CONS

This recipe may not be vegan or vegetarian-friendly.
Lamb is also not the leanest of meats, so it may not be suitable for those following a low-fat diet.

HEALTH & BENEFITS

Lamb is a great source of protein and is high in essential vitamins and minerals. It is rich in vitamin B12, thiamine, niacin and zinc which are all important for maintaining a healthy immune system and normal brain function. However, it’s important to bear in mind that lamb is also high in saturated fat, so should be consumed in moderation.
