Ingredients

455 g farfalle pasta ( bowtie pasta )
1 egg
100 ml double cream
sea salt
fresh ground black pepper
12 slices pancetta or 12 slices smoked streaky bacon , roughly sliced
1 cup fresh peas or 1 cup frozen peas
2 sprigs of fresh mint , leaves picked
freshly grated parmesan cheese
Pasta Carbonara is a classic Italian dish that has become popular all over the world. Instructions

1.First, get a large pan of salted water boiling for the pasta.
2.Crack the egg into a mixing bowl, add the cream and a pinch of salt and pepper, then whisk together and set aside.
3.Get a large non-stick frying pan on a medium-high heat.
4.Add the sliced pancetta and fry until golden and crisp.
5.Add the pasta to the boiling water and cook according to package instructions.

7.Once the pasta is cooked, reserve a cup of cooking water and then drain the pasta and add it to the frying pan with the pancetta and peas.
8.Toss everything together well, then remove the pan from the heat.
9.Pour in the egg and cream mixture and toss everything together quickly and vigorously, so the pasta is coated in a glossy, silky sauce.
10.Thin the sauce with a little reserved cooking water, if needed, then divide between bowls and serve with mint leaves and a good grating of Parmesan cheese on top.
