Ingredients

4 free-range egg yolks
3 fluid ounces water
7 ounces caster sugar
9 ounces mango pulp , roughly chopped
9 fluid ounces double cream
3 fluid ounces free-range egg whites
2 free-range egg whites
2 ounces caster sugar

3 passion fruit , flesh scooped out
2 tablespoons icing sugar
1/2 mango , finely sliced

Instructions

1.Start by making the parfait. In a saucepan over a medium heat, combine the egg yolks, water and caster sugar.
2.Whisk until light and fluffy then remove from the heat.
3.Add the chopped mango pulp to the egg mixture and mix well.
4.In a separate bowl, whisk the double cream until soft peaks form.
5.Fold the mango mixture into the whipped cream until fully combined.
6.Pour the mixture into a lined dish and freeze for at least 4 hours.
7.Preheat the oven to 100C/80C fan/Gas ¼.
8.In a large bowl, whisk the egg whites using an electric mixer until soft peaks form.
9.Gradually add the caster sugar, whisking constantly until stiff peaks form.
10.Spoon the meringue mixture into a piping bag and pipe into 4-6 large discs onto lined baking sheets.
11.Bake for 2-3 hours or until cooked through.
12.Take the parfait out of the freezer and cut into circles the same size as the meringues.
13.Carefully sandwich the parfait between two of the meringues to make a stack.
14.Whisk the double cream and icing sugar together until stiff peaks form.
15.Cut the passion fruit in half and scoop out the flesh.
16.To serve, place the meringue stack on a plate and top with whipped cream and passion fruit. Garnish with sliced mango.
