Ingredients

2 -3 large chayotes
2 tablespoons butter , plus additional for topping
1 large onion , finely chopped
4 garlic cloves , finely chopped
3 -4 large tomatoes , seeded and chopped
1 hot red pepper , seeded and chopped
1 tablespoon curry powder
salt & freshly ground black pepper
1/2 cup breadcrumbs
1/4 cup freshly grated parmesan cheese

Instructions

1.Preheat the oven to 375 degrees F.
2.Cut the chayotes in half and scoop out the seeds with a spoon.
3.In a large pot of salted boiling water, cook the chayotes for 10-15 minutes or until fork-tender.
4.Once the chayotes are cooked, remove them from the water and let them cool slightly.
5.In a large skillet, melt the butter over medium heat.
6.Cook and stir the onion and garlic in the butter until the onion is translucent.
7.Add the chopped tomatoes, hot red pepper, curry powder, and salt and pepper.
8.Reduce the heat to low and simmer for 10-15 minutes until the tomatoes have broken down and the mixture is thick.
9.Stir in the breadcrumbs and parmesan cheese.
10.Stuff the chayote halves with the tomato mixture and sprinkle with additional parmesan cheese, if desired.
11.Bake the stuffed chayotes in the preheated oven for 25-30 minutes or until the cheese is melted and golden brown.
