1 cup firmly packed fresh sorrel leaf , stems and tough ribs removed
1/4 cup chives , chopped
1 egg yolk
2 teaspoons lemon juice
1/2 teaspoon salt
1 cup canola oil or 1 cup grapeseed oil

Instructions

1.In a food processor or blender, pulse sorrel leaves and chives until finely chopped.
2.Add egg yolk, lemon juice, and salt. Pulse until well combined.
3.With the food processor or blender running, slowly pour in oil in a thin stream until the mixture becomes thick and the texture of mayonnaise. Scrape the sides of the bowl and continue to blend until smooth.
4.Serve the aioli with chicken wings, sandwiches or french fries.
