Instructions

1.In a large bowl, whisk together canola oil, vegetable broth, sweet onion, green onions, habanero peppers, fresh ginger, thyme leaves, garlic cloves, red wine vinegar, brown sugar, nutmeg, cinnamon, ground cloves, allspice, and fresh lime juice.
2.Add portabella mushroom caps to the bowl, cover, and marinate in the refrigerator for at least 4 hours, or overnight.
3.Preheat grill or grill pan to medium heat.
4.Grill mushroom caps for 3-4 minutes on each side, or until cooked through.
5.Top each cap with a slice of Monterey Jack pepper cheese and let it melt.
6.Assemble the burger with a slice of ripe beefsteak tomato, some fresh green chili pepper, and the toasted whole-grain roll.
