Ingredients

2 lbs boneless skinless chicken breasts , sliced into 1/2-inch thick strips
32 ounces jamaican jerk sauce ( or make your own ! )
4 ripe avocados
1 poblano pepper
1 mango
1 papaya
4 kiwi fruits
1 lime
1/2 cup spiced rum
1 teaspoon sea salt
1 tablespoon paprika ( I prefer Szeged brand )
1/4 cup sour cream
1 package yellow rice ( I prefer Mahatma brand )
Jamaican Jerk Chicken is a popular dish throughout the Caribbean islands, made with a variety of spices and seasonings. Instructions

1.Preheat oven to 375°F (190°C).
2.Arrange chicken strips on a baking sheet and brush with Jamaican jerk sauce.
3.Bake for 10-12 minutes, or until chicken is cooked through.
4.While chicken is cooking, prepare the Caribbean salsa.
5.a. Cut the avocados, poblano pepper, mango, and papaya into small pieces.
6.b. Peel and slice the kiwi fruit and squeeze juice from lime over all the cut fruit.
7.c. In a separate bowl, mix together the spiced rum, 1/2 cup of the Jamaican jerk sauce, salt and paprika.
8.d. Mix in the sour cream.
9.e. Pour the rum mixture over the cut fruit and mix well.
10.To plate, serve chicken strips with Caribbean salsa and yellow rice.
