Ingredients

1 cup water
1/3 cup cornmeal
1/4 cup whole milk
1/4 cup coconut milk
3 tablespoons white sugar
1/2 teaspoon vanilla extract
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
2 tablespoons raisins ( optional )

Instructions

1.In a small bowl, mix cornmeal with 1/2 cup water and set aside.
2.In a large pot, bring 1/2 cup of water, milk and coconut milk to a boil; reduce heat to medium.
3.Slowly whisk cornmeal mixture into the pot, stirring constantly.
4.Add sugar, vanilla extract, salt, nutmeg and cinnamon, and continue stirring.
5.Reduce heat to low and let porridge simmer for 15-20 minutes, stirring occasionally until it thickens.
6.Remove from heat and let it cool for 5 minutes before serving in bowls. Add raisins as desired on top of each bowl before serving.
