1/2 cup butter or 1/2 cup margarine , melted
2 tablespoons unflavored gelatin
3/4 cup grapefruit juice concentrate
2/3 cup light brown sugar
2 cups cream cheese
3/4 cup skim milk
2 medium egg whites

Instructions

1.Preheat oven to 175°C.
2.Combine graham crackers crumbs and butter, press mixture onto bottom of 9 inch springform cake pan and refrigerate.
3.Soften gelatin in grapefruit juice in a small saucepan, let stand for a minute, then heat to dissolve gelatin.
4.In a mixer bowl, blend brown sugar and cream cheese until smooth.
5.Gradually add milk and dissolved gelatin mixture, blend until smooth.
6.Beat egg whites until stiff, fold into cream cheese mixture and pour over crust.
7.Bake for about 45 minutes or until set.
8.Cool cake before removing from pan and chill in refrigerator for at least 4 hours before serving.
