Ingredients

2 lbs mutton , cubed
3 onions , chopped
1/2 bunch parsley , chopped
1/2 bunch cilantro , chopped
1 garlic clove , minced
1 teaspoon salt
1/2 lb carrot , sliced
2 tablespoons curry powder
2 teaspoons allspice
1 teaspoon sugar
2 tablespoons tomato ketchup
1 tablespoon vegetable oil

Instructions

1.Heat a large pot on medium heat.
2.Add the vegetable oil, onions, garlic, parsley and cilantro to the pot. Cook for 5 minutes or until onions turn translucent.
3.Add the curry powder, salt, allspice and sugar to the pot and continue cooking for 2 minutes.
4.Add the mutton to the pot and stir to coat with the curry mixture.
5.Add enough water to the pot to completely cover the mutton. Bring to a boil, then reduce to a simmer and cover the pot. Cook for 1 hour and 30 minutes.
6.Add the sliced carrots and tomato ketchup to the pot and continue cooking for another 30 minutes.
7.Serve hot over rice or with your choice of side dishes.
