Ingredients

300 g self-raising flour
2/3 cup caster sugar , plus
1/2 cup caster sugar , extra to coat
80 ml vegetable oil
1 large egg
175 ml buttermilk
1 teaspoon vanilla extract
3 teaspoons good-quality strawberry jam ( jelly )
100 g unsalted butter
1 teaspoon ground cinnamon

Instructions

1.Preheat oven to 180°C and line a muffin tin with paper liners.

10.Mix the remaining sugar and cinnamon in another bowl.
11.Once cool, roll each muffin in the melted butter then in the cinnamon sugar mixture.
12.Serve warm and enjoy!
