2 pounds/ 1 kg ground pork
1/4 cup/ 60 ml red wine vinegar
1 tablespoon/ 15 ml smoked paprika
1 teaspoon/ 5 ml coriander seed , grounded
1 teaspoon/ 5 ml cumin seed , grounded
4 garlic cloves , minced
3 sprigs fresh oregano , chopped
2 guajillo chilies , rehydrated and seeded
1 ancho chili , rehydrated and seeded
1 teaspoon/ 5 ml salt
fresh ground pepper
2 tablespoons/ 30 ml olive oil

Jaime's Chorizo Enchiladas are a delicious and spicy take on traditional Mexican enchiladas. The dish features a filling of ground pork seasoned with smoked paprika, coriander, and cumin, which is then wrapped in a tortilla and topped with a tangy red sauce and queso fresco. Instructions

1.In a skillet over medium-high heat, add the ground pork and cook until browned.
2.Add red wine vinegar, smoked paprika, coriander, cumin, garlic, oregano, guajillo chilies, ancho chili, salt, and pepper. Cook for 5 minutes until the spices are toasted.
3.Pour in 1 cup of water and stir to combine. Bring to a simmer and cook until the liquid has evaporated.
4.Preheat the oven to 375°F/190°C. Grease a 9x13 inch baking dish with olive oil.
5.To assemble the enchiladas, place 2-3 tablespoons of refried beans in a tortilla, followed by 1/4 cup of pork filling. Roll the tortilla around the filling and place seam side down in the baking dish. Repeat with remaining tortillas and filling.
6.Drizzle any leftover sauce over the enchiladas and sprinkle queso fresco on top.
7.Bake for 20-25 minutes until the cheese is melted and bubbly.
