Ingredients

1 1/2 lbs pork loin , cut into 6-ounce portions
1 cup all-purpose flour
1 tablespoon salt
1 teaspoon fresh ground black pepper
1 teaspoon granulated garlic
1 teaspoon paprika
1 egg
1/2 cup milk
2 teaspoons mustard
1 cup crushed unsalted cracker ( Ritz crackers will work too )
1 cup panko breadcrumbs
1/2 lb bacon , diced
1/2 diced yellow onion , approximately 1/2 cup
2 cups sliced button mushrooms
1/4 cup red wine
olive oil , for frying
2 cups beef stock
2 tablespoons unsalted butter , room temperature
2 tablespoons chopped fresh Italian parsley

Instructions

1.Preheat oven to 200 degrees F. Heat the olive oil in a skillet over medium heat.

7.Pour in the red wine and let it simmer for 2-3 minutes, then add the beef stock to the skillet and stir well.
8.Simmer for 5-8 minutes or until the sauce has thickened. Add in the unsalted butter for richness.
9.Serve the schnitzel on a plate and spoon the bacon mushroom gravy on top, garnish with chopped fresh parsley.
