Ingredients

2 tablespoons oil
1 medium onion
3 cups rice
6 cups water
1 can kidney beans
1 tablespoon smokey paprika
2 bay leaves

Instructions

1.Rinse the rice in water and drain. Set aside.
2.In a large pot, heat the oil over medium heat.
3.Add the onions and cook for 3-5 minutes until they become translucent.
4.Add the smokey paprika to the onions and stir to combine.
5.Add the kidney beans, bay leaves, salt, and pepper to the pot and stir to combine.
6.Add the water to the pot and bring to a boil.
7.Add the rice to the boiling water and stir. Cover the pot with a tight-fitting lid.
8.Reduce the heat to low and cook for 20-25 minutes or until all the water has been absorbed and the rice is tender.
9.Remove the pot from heat and let sit, covered for 5 minutes.
10.Fluff the rice with a fork and serve hot.
