Ingredients

1/2 cup dried porcini mushrooms
2 medium onions , thinly sliced
4 medium carrots , chopped
1 medium leek , cleaned thoroughly and thinly sliced
3 celery ribs , sliced thin
6 cloves garlic , sliced
1 tablespoon dried thyme
1 tablespoon dried savory
1 tablespoon dried marjoram
1 tablespoon dried oregano
1 tablespoon dried fennel seed ( optional )
1 teaspoon dried sage ( optional )
1 teaspoon rosemary ( optional )
1 teaspoon lavender ( optional )

Instructions

1.Rinse porcini mushrooms in cold water, quarter and set aside.
2.In a 12-quart pot, place the mushrooms along with the rest of the ingredients.
3.Cover the ingredients with about 6 quarts of cold water.
4.Bring the mixture to a boil and turn down to a simmer. Skim off any foam that forms on top.
5.Simmer for 1 1/2 hours, then strain mixture through a fine-mesh strainer, discarding solids and reserving the clear liquid. Season with salt to taste.
