Ingredients

1 bunch watercress
1/2 medium-size red onion
2 oranges ( reserved a few pieces for the juice )
4 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
salt and pepper

Instructions

1.Rinse and pat dry the watercress
2.Cut the red onion in half and thinly slice one half
3.Peel and de-seed the oranges, reserving a few pieces for the juice
4.In a separate bowl mix together the olive oil, red wine vinegar, and orange juice
5.Arrange the watercress on a plate and top with the sliced red onion and orange pieces
6.Drizzle the salad with the dressing
7.Sprinkle with salt and pepper to taste
